Tex Mex Meatloaf

1 lb. ground beef

1 lb. ground pork

4 tablespoons of taco seasoning

2 cups of tortilla chips (the harder, round corn chip – they work best)

1 cup of shredder cheese (I like 1/2 cheddar, 1/2 monterey jack)

2 eggs, beaten

2/3 cup of your favorite salsa

Mix all ingredients together in bowl.Form mixture into a loaf.Place in Slow Cooker – make handles out of aluminum foil to lay under loaf for your convenience.Cook on LOW for 8 -10 hours.
