3 1/2 – 4 lb Pork roast( I used a shoulder blade)
1/3 cup low sodium soy sauce
1/2 cup apricot jam(or orange marmalade)
2 cloves pressed garlic
1 1/2 tsp. red pepper flakes
3 tablespoons ketchup
Combine ketchup, pepper flakes, garlic, jam and soy sauce and mix until smooth. Brush the glaze over all sides of the meat. Cover and cook on low 8 1/2 hours. I made another batch of the glaze and brushed more on during the final hour of cooking. The meat turned out very good-fell off the bone. I served with steamed rice, pineapple, and soybeans. The glaze was excellent-can’t wait to try it on ribs!
