Chicken Stew with Latin Flavor

-pack of chicken (I used 2 split breasts and 5 drumsticks) -3 red potatoes quartered -3 peeled carrots, in chunks -1 14 oz can of diced tomatoes 1 onion diced (big chunks) -minced garlic -chopped cilantro -chicken bouillon cube Salt, pepper, cumin, oregano -season chicken with the salt and pepper, place the chicken on Cthe bottom, add the rest of the ingredients, sprinkle the cumin and oregano on everything (not a lot, cumin is a strong spice) I add about 1/2 cup of water because my kids like it “soupy”. 1 pound boneless skinless chicken breasts 2 packets dry chicken gravy mix (0.87 ounce packets) 1 10 3/4 ounce can cream of chicken soup 1 and 3/4 cups of water Sprinkle of black pepper Place the  packets, cream of chicken soup, water and pepper in your slow cooker. Buffalo Chicken Cheese Stuffed Shells

1 package (12 Oz. Size) Jumbo Shells   2 whole Boneless, Skinless Chicken Breasts   1 Tablespoon Vegetable Oil   1 teaspoon Salt   ⅔ cups Hot Sauce   ⅓ cups Bleu Cheese   ⅓ cups Mozzarella Cheese, Shredded   ⅓ cups Parmesan Romano Cheese   2 cups Ricotta Cheese Prepare the pasta according to package directions. Cut the chicken into small pieces, and then cook in a skillet over medium heat with the vegetable oil until no longer pink in the center. Garlic Chicken

4-6 chicken breasts   1 cup packed brown sugar    2/3 cup vinegar (I used apple cider vinegar)   1/4 cup lemon-lime soda (diet or regular)   2-3 Tablespoons minced garlic   2 Tablespoons soy sauce   1 teaspoon fresh ground pepper   2 Tablespoons corn starch   2 Tablespoons water   Red pepper flakes (optional) Spray slow cooker with non-stick cooking spray. Place chicken (frozen, thawed or fresh) inside slow cooker. Mix together brown sugar, vinegar, soda, garlic, soy sauce, and pepper together. Pour over chicken. Cook on low for 6-8 hours or high for 4 hours. Take chicken pieces out of slow cooker (mine basically fell apart) and pour remaining sauce into saucepan. Place saucepan over high heat. Mix together corn starch and water, pour into saucepan, and mix well. Let sauce come to a boil and boil for 2-3 minutes, or until it starts to thicken and turns into a glaze. Remove from heat and let sit for a minute or two (it will continue to thicken as it cools down). Sprinkle red pepper flakes on top if desired. Chicken Bombs

Chicken Bombs   This was tonight’s dinner and I got the chicken on sale and bought the rest at Save A Lot. All together it cost me about $10 for 4 servings. 4 Boneless skinless chicken breast, pounded out thin   3 oz. cream cheese   1/2 C shredded colby jack cheese   1/2 tsp garlic powder   1/2 tsp Tony’s creole seasoning   2 jalapeno peppers, sliced in half lengthwise and seeds removed   8 slices bacon   BBQ sauce (I used a brown sugar based sauce) After chicken is pounded thin. Mix the cheeses, garlic and creole seasoning in a small bowl. place a heaping spoon of cheese mixture into the half jalapeno. Place jalapeno at the end of the chicken closest to you and roll to where pepper is tucked inside chicken. Wrap the chicken tightly with 2 slices of bacon and place on a baking sheet or in a baking dish and coat with BBQ sauce. Bake uncovered @ 350 for 30-35 minutes. Read More »

Cheesy Potato Soup

Cheesy Potato Soup   Ingredients 3 cups chicken broth 2 lbs frozen hash brown potatoes 1 1/2 teaspoons salt 3/4 teaspoon pepper 3 cups milk 3 cups shredded cheddar cheese (Monterey Jack tastes great too) Put chicken broth, potatoes, salt and pepper in crock pot. Cheesy Chicken and Rice

Slow Cooker Cheesy Chicken & Rice. Ingredients 4 Boneless Skinless Chicken Breast 1 large chopped onion 8 ounce box of Zatarain’s Rice Mix (Cooked) 1 cup of shredded Cheddar or Colby Jack 1 Can Cream of Chicken Soup 1 Can of Corn or use two cups of frozen veggies. Salt & Pepper to taste.
