Tortellini Soup

1 lb mild bulk Italian sausage 2 garlic cloves,minced 1 cup water 1 (14 oz) can diced tomatoes 1/2 tsp basil 1 (8 oz) can tomato sauce 8 oz frozen tortellini 1 cup chopped onion 5 cups beef broth 1 1/2 cups shredded zucchini 1 cup grated carrots 1/2 tsp oregano 1 medium green pepper, chopped Brown sausage and drain grease. Place sausage, onions, garlic, broth, water, tomatoes, carrots, and tomato sauce in slow cooker. Cover and cook on LOW for 6 hours. Add basil, oregano, zucchini, green pepper, and tortellini to slow cooker. Cover and cook for another hour on HIGH or until tortellini are done. Makes 8 servings. Read More »

UNSTUFFED CABBAGE ROLLS

1 1/2 to 2 pounds lean ground beef or turkey 1 tablespoon oil 1 large onion, chopped 1 clove garlic, minced 1 small cabbage, chopped 2 cans (14.5 ounces each) diced tomatoes 1 can (8 ounces) tomato sauce 1/2 cup water 1 teaspoon ground black pepper 1 teaspoon sea salt Preparation: In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender. Add the garlic and continue cooking for 1 minute. Beef and Broccoli

2 Lbs. chuck steak cut into strips (I used a boneless chuck roast) 1 can of beef consomme  1/2 cup of oyster sauce  2 tablespoons cornstarch 1.5 lbs. broccoli florets (steamed) 3 tbs. sesame seeds Place beef in slow cooker, cover with consomme and oyster sauce.Cook beef on HIGH for 3 hours.Remove 2 tablespoons of liquid, mix together with cornstarch. Add cornstarch mixture back into slow cooker and stir, creating a thicker “gravy”.Cook on HIGH an additional 15 minutes.Add broccoli, mix, and cook on HIGH for 10 additional minutes.Serve over white rice and serve with sesame seeds Read More »

Tex Mex Meatloaf

1 lb. ground beef 1 lb. ground pork 4 tablespoons of taco seasoning 2 cups of tortilla chips (the harder, round corn chip – they work best) 1 cup of shredder cheese (I like 1/2 cheddar, 1/2 monterey jack) 2 eggs, beaten 2/3 cup of your favorite salsa Mix all ingredients together in bowl.Form mixture into a loaf.Place in Slow Cooker – make handles out of aluminum foil to lay under loaf for your convenience.Cook on LOW for 8 -10 hours. Thanks Ange Zee! 1 1/2 pound Beef Flank Steak 2-3 bell peppers (variety of colors) 1 large white onion Sauce Ingredients : 2 limes juiced 1 orange juiced 1/2 cup cilantro leaves and stems 1 chipotle pepper (from a can of chipotle peppers in adobe, hispanic food aisle) 1 garlic clove 1/2 teaspoon salt 1/2 teaspoon pepper 1 teaspoon cumin Items for serving Flour or corn tortillas Guacamole Monterey jack cheese Sour cream In a blender combine sauce ingredients (lime juice, orange juice, cilantro, chipotle pepper, garlic clove, salt, pepper and cumin). Pulse these items. Put flank steak in slow cooker, and pour sauce over the steak. Slice bell peppers and onions in a thick slice.Put bell peppers and onions on top of steak and sauce.Set slow cooker to low, and cook for 8 hours. Roast , Veggies, and Potatoes

INGREDIENTS 4-5 red potatoes cut into bite size pieces 1 pork loin roast (3.5-4 lbs) 4 carrots cut also into bite size pieces 1/2 cup water 1 package ( 10 ounces) frozen baby peas 1 packet of Lipton Onions Mix. salt and pepper to taste * I like to  marinate my meat the night before in a Gallon Freezer  bag . I take a  1/2 cup or water and 1 packet of Onion Mix and I mix it up  and pour it in Freezer bag  and then place the meat inside and put in the refrigerator until your ready to slow cook. Place potatoes,carrots and pork roast in crock pot add water cover cook on low 6-8 hours or until vegetables are tender Add peas during the last hour of cooking. Makes 6 servings Read More »
