2 pounds hamburger meat, browned and crumbled into small pieces
1 cup chopped onion
1 green bell pepper, diced
1 orange bell pepper, diced
1 teaspoon salt
1 can of diced tomatoes, (15 ounce can – I buy the generic brand)
1 large can of Cream of Chicken soup
10-15 small fajita size tortillas (corn or flour – whichever you prefer)
1 packet of taco seasoning
2 cups of shredded cheese
Brown hamburger meat. Place all the ingredients (except tortillas and cheese) in a mixing bowl and stir with a wooden spoon so that all ingredients are mixed well together. Place a layer of tortilla shells on the bottom of the crock pot. Spoon hamburger and veggie mix over in about a 1/2 inch thick amount. Stack another layer of tortilla shells over the mix, and continue stacking layers all the way up until you run out of mixture. Cover top with shredded cheese and cook on low for 7-8 hours. Serve as a casserole, and top with more cheese, sour cream, or fresh avocado. Your kids will want more and more.
