Beef Minestrone Stew


1lb ground beef 1 small onion, chopped 1 can of ready to serve minestrone soup 1 can stewed tomatoes 1 can whole kernel corn, drained One can chopped green chilies 1 can of pinto beans, drained and rinsed 1/2 teaspoon garlic powder 1/2 teaspoon onion powder In a frying pan ,cook beef and onion until the meat is no longer pink and drain. 1 pound shredded, cooked chicken 1 (15 ounce) can whole peeled tomatoes, mashed 1 (10 ounce) can enchilada sauce 1 medium onion, chopped 1 (4 ounce) can chopped green chile peppers 2 cloves garlic, minced 2 cups water 1 (14.5 ounce) can chicken broth 1 teaspoon cumin 1 teaspoon chili powder 1 teaspoon salt 1/4 teaspoon black pepper 1 bay leaf 1 (10 ounce) package frozen corn 1 tablespoon chopped cilantro 7 corn tortillas vegetable oil Directions Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours. Preheat oven to 400 degrees F (200 degrees C). Lightly brush both sides of tortillas with oil. 1 lb mild bulk Italian sausage 2 garlic cloves,minced 1 cup water 1 (14 oz) can diced tomatoes 1/2 tsp basil 1 (8 oz) can tomato sauce 8 oz frozen tortellini 1 cup chopped onion 5 cups beef broth 1 1/2 cups shredded zucchini 1 cup grated carrots 1/2 tsp oregano 1 medium green pepper, chopped Brown sausage and drain grease. Place sausage, onions, garlic, broth, water, tomatoes, carrots, and tomato sauce in slow cooker. Cover and cook on LOW for 6 hours. Bacon Potatoe Soup


Potato Soup 3lbs potatoes 1 onion, diced 5 cups chicken or vegetable broth Sprinkle thyme, leaves  1/4 cup butter sprinkle salt sprinkle pepper 2 cups shredded cheddar cheese (about 8 oz) 1 cup sour cream 6 thick-cut slices bacon, cooked and crumbled 2 green onions, sliced Combine potatoes, onion, broth, thyme, butter, salt and pepper in slow cooker.  Cook on low for 6 to 8 hours, or high for 3 to 4.  Use an immersion blender to puree to desired consistency.  Alternatively, puree in batches using a regular blender or food processor.  Add cheese and sour cream and stir until melted and blended.  Top with bacon and green onions to serve. Broccoli and Velveeta Cheese

2 pkg. (10 oz.) frozen chopped broccoli   1 (8 oz.) pkg. Velveeta cheese, diced   1 sleeve Ritz crackers   c. melted butter   1/4 c. melted butter (for the base of casserole) Cook broccoli as directed on package.Crush crackers and mix with 1/4 cup melted butter in bottom of casserole dish.   Cover with 1/2 of the diced cheese, followed by 1/2 of the broccoli and 1/2 of the crumbs.   Add another layer of broccoli and cheese; top with crumbs.   Pour melted butter on top of last layer   Bake at 375 degrees for 30 minutes.   Use a 1 1/2 or 2 quart size casserole Read More »
