1.5 cups of stone ground grits 6 cups of water 2 teaspoons salt 2 cups cream 1 teaspoon salt 2 sticks of butter (yeah this recipe is not on my most healthy list – but so worth it) 12 ounces of shredded cheddar cheese Add grits, water, and salt to crock pot and cook on low for 7 hours. Tuna and Corn Bake

8 oz macaroni 1 can of 14 oz corn kernels 14 oz can tuna,drained 4oz mushrooms,chopped 1 can of cream of chicken soup 1/4 cup red capsicum(bell pepper), chopped 1 cup thin cream 8 ounce cheddar cheese, grated 1/4 cup chopped parsley Topping 1 cup soft breadcrumbs 1/4 cup melted butter 2 tablespoons grated Parmesan cheese 1 teaspoon dried basil Cook macaroni in boiling water and drain and place to the side. Place soup,corn,red capsicum,tuna ,mushrooms ,cream cheese ,and parsley in the slow cooker. Mix together. Cover and cook on high for an hour or low for two hours until vegetables have softened. Preheat oven to 380 Fahrenheit. Pour mixture into a greased casserole together with macaroni and mix well. For the breadcrumb topping mix all topping ingredients together. -12 ounces skinless, boneless chicken breasts cut into roughly 1-inch cubes -1 lb. of shrimp -1 lb. of smoked sausage, cut into 1/2-inch slices -2 chopped bell peppers (any color, get crazy) -2 chopped celery stalks -1 chopped onion -3 cloves of minced garlic -1 can of whole tomatoes -1 small can of tomato paste -1 can of beef or chicken broth -1/2 tsp. of basil -1 tbsp. of your favorite hot sauce -1 tbsp. cayenne powder -1 tbsp. cajun seasoning -1 tbsp. parsley -1 tbsp. oregano -1 tbsp. salt Instructions: Combine all ingredients except shrimp in your Crock-Pot® Slow Cooker. 2 cans of tuna drained 2 cups low-sodium tomato juice 6 oz tomato paste 2 tbsp dried onion flakes 1/4 tsp garlic powder Sprinkle veggie flakes (2 tbsp) 4 green bell peppers, tips removed and seeded Mix tomato juice and tomato paste,reserving one cup. Mix remaining tomato juice mixture with tuna, onion flakes ,veggie flakes,and garlic powder. Fill peppers equally with mixture. Place upright in Crockin’ pot. 3-4 Lobster Tails 1 Pint Heavy Cream 1 Clove Garlic, Finely Minced 2 (14.5 Oz.) Cans Petite Diced Tomatoes, With Juice 1 (32 Oz.) Carton Low-Sodium Chicken Broth 1 Tablespoon Old Bay Seasoning 2 onions, Finely Minced 1 Teaspoon Dried Dill 1/4 Cup Fresh Parsley, Chopped 1 Teaspoon Freshly Cracked Black Pepper 1/2 Teaspoon Paprika Puts onions and garlic in a microwave safe bowl. Cook them in a skillet with oil or butter. Add onions and garlic mixture to a slow cooker. Continue adding tomatoes, chicken broth, old bay seasoning, dill, parsley, pepper & paprika to the slow cooker. Cut off the fan part of the very end of the lobsters. Place the lobsters in the slow cooker. Stir, cover and cook on low for 5-6 hours or 3 hours on high. Remove the lobster tail ends and discard. Using a blender puree the soup mixture to your desired chunkiness. Add the soup back into the slow cooker. Add your lobster tails to the soup, cover and cook 45 minutes on low or until the shells turn red and the lobster meat is cooked. Remove lobster tails from the soup and let cool slightly. While the lobster is cooling add the cream and stir. Cut each lobster tail in half long-ways and remove the lobster flesh from the shells. Throw away the shells. Cajun Shrimp & Sausage Pasta

Ingredients 1/2 – 3/4 lb cooked fettuccine 2 TBS olive oil 1 lb peeled, deveined raw large shrimp 1 TBS plus 2 tsp Essence seasoning (recipe below – I think you can buy this, too.) 1 1/2 smoked turkey sausages, sliced and quartered (I use Butterball) 1/2 cup diced green pepper 1/2 cup diced yellow onion 1 TBS minced garlic 1/2 cup chicken stock 1 tsp dried thyme 1 tsp dried basil 1/2 cup heavy cream 1/2 cup grated Parmesan Essence Creole Seasoning 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme Directions Heat 1 TBS of olive oil over medium high heat in a large saute pan. Season the shrimp with 2 teaspoons of the Essence. Place the shrimp in the pan and saute until almost done. Remove the shrimp from the pan and set aside. Place the remaining TBS of olive oil in the saute pan and onions and bell peppers. Saute, stirring occasionally, until the onions are translucent, about 3 minutes. Add the sausage and cook another minute. Add the garlic to the pan and saute for 30 seconds. Add the chicken stock to the pan and scrape with a spoon to remove any browned bits that have formed in the bottom of the pan, about 30 seconds. Add the thyme, 1 TBS of Essence and 1/2 tsp salt and cook for 2 minutes. Add the heavy cream to the pan and cook an additional 2 minutes. Return the shrimp to the pan and pasta to the pan. Continue to cook the sauce and pasta, stirring occasionally, for about 3-5 minutes. Remove from the heat and add the basil and Parmesan. Read More »

Crab Cakes                                                 Taste Almost like Joe’s Crab Shack Crab Cakes 2/3 cup mayonnaise   5 egg yolks   2 tsp lemon juice   2 tbsp Worcestershire sauce   2 tsp Dijon mustard   2 tsp black pepper   1/4 tsp salt   1/4 tsp blackening seasoning   1/4 tsp crushed red pepper flakes   1/2 cup crushed   chopped parsley   2 1/2 cups breadcrumbs   2 lbs crabmeat. BBQ Shrimp                                                 Grilled BBQ Shrimp 1.5 – 2lbs raw shrimp,peeled and deveined   1 tsp seasoning salt   1/4 cup ketchup   1 teaspoon dried oregano   1/2 cup olive oil    2 tablespoons of lemon juice   1 tablespoon of Worcestershire sauce    1/2 tsp of Red Hot sauce Combine all Ingredients except shrimp. Mix well and then combine shrimp and pour in a Ziploc bag. Marinade for 2 hours in frig. Cook on skill or grill skill skillet. I use a grill screen with holes.
