3lbs potatoes 1 onion, diced 5 cups chicken or vegetable broth Sprinkle thyme, leaves 1/4 cup butter sprinkle salt sprinkle pepper 2 cups shredded cheddar cheese (about 8 oz) 1 cup sour cream 6 thick-cut slices bacon, cooked and crumbled 2 green onions, sliced
Combine potatoes, onion, broth, thyme, butter, salt and pepper in slow cooker. Cook on low for 6 to 8 hours, or high for 3 to 4. Use an immersion blender to puree to desired consistency. Alternatively, puree in batches using a regular blender or food processor. Add cheese and sour cream and stir until melted and blended. Top with bacon and green onions to serve.
